Perhaps what was most intriguing was the floral note that created a perfect counter-balance to the honey. The honey barrel finish added a dark sweetness that elevated what was already an intense and flavor bourbon. Overall, I could not have been more impressed with this bourbon. A wonderful floral and mint note are present on the finish, along with spicy cinnamon chai tea. The palate brings cherry pie and creamy chocolate notes that when combined with the honey, reminds me of a Butterfinger candy bar. Rich honeycomb and wildflowers dominate the nose with a subtle green tea backbone. Even though Whiskey Thief Distilling had already been distilling their own whiskey for 5 years or so at that point, they saw a market for sourced bourbon they could sell quickly for a profit. Judge for yourself on the Premium Tour, which includes a tasting of the core range (the 100% Islay is estate-produced, from grain to glass), along with specialty cask maturations. All of this wouldn’t be worth a damn if it didn’t result in truly exceptional whisky. It’s the only true farm distillery in the country, utilizing grain grown and malted on site, and the liquid runs off the smallest stills in all of Scotland. A number of distinctions mark the operation as unique. Rather than concerning itself with output, Kilchoman is dedicated to process. This distillery, established in 2005, is the closest example the island has to what Americans would call a craft producer.
